Ingredients
  

  • 1 cup chicken broth
  • ½ cup chopped peeled potato
  • ¼ cup chopped celery
  • ¼ cup chopped carrot
  • ¼ cup chopped green or sweet red pepper
  • 1 cup skim milk
  • 2 tablespoons all-purpose flour
  • ¼ cup shredded American cheese
  • Dash ground nutmeg

Instructions
 

  • In a medium saucepan combine chicken broth, potato, celery, carrot, and green or sweet red pepper. Bring to boiling; reduce heat. Cover and simmer for 10 to 12 minutes or till vegetables are tender.
  • In a small bowl stir together milk and flour; stir into saucepan. Cook and stir till thickened and bubbly. Cook and stir for 1 minute more. Stir in cheese till melted; stir in nutmeg.
  • Microwave directions: In a 1½- or 2-quart microwave-safe casserole combine chicken broth, potato, celery, carrot, and green or sweet red pepper.
  • Micro-cook, covered, on 100% power (high) for 8 to 10 minutes or till vegetables are tender.
  • In a small bowl stir together milk and flour; stir into casserole.
  • Micro-cook, uncovered, on high for 3 to 4 minutes, stirring after every minute till mixture begins to thicken.
  • Stir every 30 seconds till thickened and bubbly; micro-cook 1 minute more. Stir in cheese till melted; stir in nutmeg.
