Ingredients
  

  • ¾ pound lean ground pork
  • 2 cups sliced fresh mushrooms
  • 1 cup shredded carrots
  • ½ cup green or sweet red pepper
  • cut into bite-size strips
  • 2 cloves garlic minced
  • 1 tablespoon cornstarch
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated gingerroot
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon curry powder
  • 4 ounces thin spaghetti cooked and drained
  • 2 cups cooked
  • 2 cups bean sprouts
  • ½ cup sliced green onion

Instructions
 

  • In a large skillet cook pork, mushrooms, carrots, green pepper, and garlic till meat is no longer pink and vegetables are tender. Drain off fat.
  • Stir cornstarch into meat mixture. Stir in chicken broth, soy sauce, gingerroot, crushed red pepper, and curry powder. Cook and stir till thickened and bubbly. Cook and stir for 2 minutes more.
  • Stir in cooked spaghetti, bean sprouts, and green onion; heat through. If desired, garnish with additional sliced green onion.
